Cinnamon Pecan Pancakes (Gluten-Free)

Ingredients

  • 2 Cups Gluten Free Flour Blend Add 1 TSP Xanthan Gum if the blend does not contain it already.
  • 1 TBSP Baking Powder
  • 1 TSP Salt
  • 1/4 Cup Granulated Sugar
  • 1 TSP Cinnamon
  • 1 1/2 Cups Milk
  • 2 Eggs Large
  • 1 TSP Vanilla Extract
  • 1/8 Cup Pure Maple Syrup
  • 4 TBSP Melted Butter
  • 1/4 Cup Chopped Pecans

Instructions

  • In a large bowl, combine flour, baking powder, salt, cinnamon, and sugar and whisk together.
  • In a separate bowl, beat together the milk, eggs, vanilla extract, and syrup.
  • Combine the milk mixture with the flour mixture. Once well mixed, add the melted butter and pecans. Mix again, just until combined.
  • Cook pancakes in a greased skillet over medium heat, flipping halfway through cooking. Each side should take about 3 to 5 minutes and be golden brown.
  • Serve with some maple syrup and enjoy!
