Ingredients
- 1 Stick Butter 8 TBSP, Softened
- 1 1/4 Cup Granulated Sugar
- 2 Eggs Large
- 1 TSP Lime Zest Finely Grated
- 1 1/2 TBSP Fresh Lime Juice
- 1 1/2 TBSP Fresh Lemon Juice
- 2 1/2 Cups All Purpose Flour
- 1 TSP Baking Soda
- 1/2 TSP Salt
- 1/2 Cup Confectioners' Sugar Sifted
Instructions
- Preheat oven to 350 degrees F and line 2 baking sheets with parchment paper.
- In a stand mixer, or with a handheld electric mixer, cream together butter and sugar, on medium speed, for about 2 minutes.
- Beat in eggs, 1 at a time, until well blended.
- Now add he lime zest, lime juice, and lemon juice. Beat just until combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- With the mixer on low, gradually add the flour mixture.
- Once fully combined, use a cookie scoop to scoop out dough. You can also measure out 1 tablespoonfuls of dough. Roll into balls.
- Roll each dough ball in the confectioners' sugar until completely coated and place on a baking sheet, 2 inches apart.
- Bake, one pan at a time, for 18 to 20 minutes. Cookies will look puffy and crackled.
- Allow to rest on baking sheet for 5 minutes and then transfer to a cooling rack to cool completely. Enjoy!
