- 1 3/4 Cup All Purpose Flour
- 3/4 TSP Baking Soda
- 1/4 TSP Baking Powder
- 1/2 Cup Cocoa Powder
- 1/2 TSP Salt
- 2 Sticks Butter Softened
- 1 3/4 Cup Granulated Sugar
- 1 Egg Large
- 1 TSP Vanilla Extract

Instructions
- In a medium bowl, whisk together the flour, baking soda, baking powder, cocoa powder, and salt.
- With an electric mixer, beat together the butter and granulated sugar on medium/high speed for about 3 to 5 minutes. The mixture should be fluffy and light.
- Add egg and vanilla to the butter mixture and beat until creamy.
- Turn mixer to low and slowly add the flour mixture until all is incorporated.
- Divide the dough in half. Place each half in plastic wrap and form into a flat disc shape. Refrigerate for about an hour.
- Preheat oven to 350 degrees F and line two baking sheets with parchment paper.
- On a lightly floured surface, roll out each disc to 1/4 inch thickness and cut cookies into circles, rerolling leftover dough if needed.
- Bake, one pan at a time, for about 12 minutes.
- Remove baking sheet from oven and allow to set for 5 minutes on cooling rack. Remove cookies from baking sheet and allow to completely cool on cooling rack. Enjoy!
