Ingredients

  • 1 TBSP Cooking Oil
  • 1 Yellow Onion Minced
  • 1 Can of Carrots 15 oz.
  • 1 TSP Celery Seed Or 1 stalk of celery chopped
  • 1 TSP Minced Garlic
  • 1 TSP Dried Parsley
  • 1/2 TSP Dried Thyme
  • 1 TSP Salt
  • 1/4 TSP Black Pepper
  • 5 Cups Chicken Broth Low Sodium
  • 1 Cup Brown Rice
  • 2 Chicken Breasts Cooked and Chopped

Instructions

  • In a large pot, heat oil over medium/high heat. Cook onion for about 3-5 minutes, or until it starts to turn translucent.
  • Now add celery seed, garlic, parsley and thyme. Cook for 1 minutes.
  • Next, add salt, pepper, chicken broth, carrots, chicken, and rice. Stir.
  • Bring to a boil, then reduce heat to a simmer. Cover and cook for about 30 minutes, stirring occasionally. Once rice is fully cooked, serve and enjoy!
