Instructions
In a large pot, heat oil over medium/high heat. Cook onion for about 3-5 minutes, or until it starts to turn translucent.
Now add celery seed, garlic, parsley and thyme. Cook for 1 minutes.
Next, add salt, pepper, chicken broth, carrots, chicken, and rice. Stir.
Bring to a boil, then reduce heat to a simmer. Cover and cook for about 30 minutes, stirring occasionally. Once rice is fully cooked, serve and enjoy!
