Chicken and Rice Soup is an easy recipe and packs a lot of flavor!
Ingredients
- 1 TBSP Cooking Oil
- 1 Yellow Onion Minced
- 1 Can of Carrots 15 oz.
- 1 TSP Celery Seed Or 1 stalk of celery chopped
- 1 TSP Minced Garlic
- 1 TSP Dried Parsley
- 1/2 TSP Dried Thyme
- 1 TSP Salt
- 1/4 TSP Black Pepper
- 5 Cups Chicken Broth Low Sodium
- 1 Cup Brown Rice
- 2 Chicken Breasts Cooked and Chopped
Instructions
- In a large pot, heat oil over medium/high heat. Cook onion for about 3-5 minutes, or until it starts to turn translucent.
- Now add celery seed, garlic, parsley and thyme. Cook for 1 minutes.
- Next, add salt, pepper, chicken broth, carrots, chicken, and rice. Stir.
- Bring to a boil, then reduce heat to a simmer. Cover and cook for about 30 minutes, stirring occasionally. Once rice is fully cooked, serve and enjoy!
