Start by boiling the maple syrup in a saucepan and reduce to a simmer for 10 minutes. This will help it reduce to 3/4 cup. Once reduced, let cool to room temperature.
Preheat oven to 350 degrees F and grease an 8x8 pan.
In a bowl, or stand mixer, beat together the brown sugar, coconut oil, vanilla, and egg.
In a separate bowl, whisk together the flour, baking powder, and salt.
Slowly add the flour mixture and syrup to the sugar mixture, alternating between additions.
Once the batter is well mixed, pour into the 8x8 pan. Bake for about 30 minutes, or until a toothpick inserted into the center comes out clean. Enjoy!
