In a bowl, mix together garlic powder, onion powder, parsley, rosemary, thyme, salt, and pepper.
After washing potatoes, pierce each side of each potato with a fork to allow steam to escape.
Brush each potato with olive oil and sprinkle the spice mixture on each side of the potatoes and rub the spices into the oil, coating all the skin.
Place potatoes into a preheated smoker at 230 degrees F.
Cook for 2 hours.
Turn heat up to 375 degrees F for 30 to 45 minutes. Potatoes should have an internal temp of 205 degrees F to 210 degrees F. Enjoy!
