In a bowl, mix together the peanut butter, maple syrup, pumpkin puree, and vanilla.
Now mix in coconut flour, pumpkin pie spice, and salt. Need a recipe for pumpkin pie spice? Try ours! Homemade Pumpkin Spice - Just Give Us The Recipe Once well combined, use a cookie scoop, or tablespoon measure, to scoop out equal portions of the mix. Roll each portion into a ball and place on a cookie sheet.
Refrigerate at least 30 minutes.
Right before removing dough balls from refrigerator, melt chocolate chips. Microwave chocolate chips in 30 second increments, stirring in between, until chocolate is smooth. If chocolate seems too thick, add 1 TBSP of coconut oil.
Take dough balls out of the refrigerator and dip into the melted chocolate. Place dipped dough balls back onto the cookie sheet and return to refrigerator to harden. Enjoy!
