Heat oil in a skillet over medium/high heat.
In a bowl, whisk together the 1/2 cup cornstarch, onion powder, garlic powder, paprika, salt, and black pepper.
Coat the chicken cubes in the cornstarch mixture, covering all sides.
Fry chicken in oil until internal temp reaches 165 degrees F, about 3 to 4 minutes on one side and then flipping to the opposite side for another 3 to 4 minutes.
While chicken is frying, combine butter, garlic, honey soy sauce, and lemon juice in a small saucepan over low/medium heat.
Mix together 1 tsp of cornstarch in 2 TBSP of chicken broth. Add to the butter and honey mixture. Cook until slightly thickened.
Serve chicken over rice and veggies. Drizzle sauce over top. Enjoy!
