Heat olive oil in a pan over medium heat.
In a bowl, whisk together the paprika, garlic powder, oregano, parsley, black pepper, and salt.
Sprinkle each side of chicken pieces with the spice mixture, or you can lightly press each chicken piece into the mixture.
Cook chicken in oil, flipping halfway through. (Approximately 3-4 minutes.) Internal temp should reach 165 degrees F.
When chicken is fully cooked, remove from pan and set aside.
Add butter to the hot pan and cook the onions and mushrooms until the onions become translucent. Add the garlic and cook an additional minute.
Add the chicken back to the pan and serve. Enjoy!
