Preheat oven to 350 degrees F and grease an 8 x 8 baking dish.
In a medium bowl, mix together sugar, eggs, and melted butter.
In a separate bowl, whisk together the flour, xanthan gum (if using gluten-free flour), cocoa powder, baking powder, and salt.
Combine the wet mixture with the dry ingredients and mix together with a spoon, just until combined.
Pour into the 8 x 8 pan and bake for 25 to 30 minutes, or until toothpick inserted into center comes out clean. Allow to completely cool.
Once brownies are cooled, spread Cool Whip over the top. Top with crushed Oreos and sprinkle. Store in refrigerator. Enjoy!
