Preheat oven to 350 degrees F and grease an 8x8 baking dish or pan.
In a large bowl, whisk together flour, baking powder, salt, pudding mix, and sugar.
In a separate bowl, combine eggs, sour cream, lemon zest, lemon juice, lemon extract, and butter. Whisk together until smooth.
Combine the wet and dry ingredients and mix until well combined.
Pour batter into pan and bake for 40 to 45 minutes or until a toothpick inserted into the center comes out clean. Allow to cool on cooling rack.
While bars are cooling, prepare the glaze. Whisk together the powdered sugar, lemon juice and 1 TBSP of milk. If mixture seems too thick to pour, add another TBSP of milk. It should be smooth and pour easily over the bread bars.
Once the bars have cooled, pour glaze over top and serve. Enjoy!(Store in refrigerator.)
