Smoked Potatoes

Ingredients

  • 2 TBSP Garlic Powder
  • 2 TBSP Onion Powder
  • 2 TBSP Dried Parsley
  • 2 TSP Dried Rosemary
  • 1 TSP Dried Thyme
  • 1/2 TSP Salt
  • 1/2 TSP Black Pepper
  • 3 TBSP Olive Oil
  • 10 Medium Russet Potatoes

Instructions

  • In a bowl, mix together garlic powder, onion powder, parsley, rosemary, thyme, salt, and pepper.
  • After washing potatoes, pierce each side of each potato with a fork to allow steam to escape.
  • Brush each potato with olive oil and sprinkle the spice mixture on each side of the potatoes and rub the spices into the oil, coating all the skin.
  • Place potatoes into a preheated smoker at 230 degrees F.
  • Cook for 2 hours.
  • Turn heat up to 375 degrees F for 30 to 45 minutes. Potatoes should have an internal temp of 205 degrees F to 210 degrees F. Enjoy!
