Lemon Bread Bars
Ingredients
- 1 1/2 Cups All Purpose Flour
- 1 TSP Baking Powder
- 1/2 TSP Salt
- 1 (3.4 oz.) Package Instant Lemon Pudding
- 1 Cup Granulated Sugar
- 1 Stick Butter Melted
- 3 Eggs Large
- 1 Cup Full Fat Sour Cream
- Zest of 1 Lemon
- Juice of 2 Lemons About 1/3 Cup
- 2 TSP Lemon Extract
For Glaze:
- 1 3/4 Cup Powdered Sugar
- Juice of 1 Lemon
- 1-2 TBSP Milk
Instructions
- Preheat oven to 350 degrees F and grease an 8x8 baking dish or pan.
- In a large bowl, whisk together flour, baking powder, salt, pudding mix, and sugar.
- In a separate bowl, combine eggs, sour cream, lemon zest, lemon juice, lemon extract, and butter. Whisk together until smooth.
- Combine the wet and dry ingredients and mix until well combined.
- Pour batter into pan and bake for 40 to 45 minutes or until a toothpick inserted into the center comes out clean. Allow to cool on cooling rack.
- While bars are cooling, prepare the glaze. Whisk together the powdered sugar, lemon juice and 1 TBSP of milk. If mixture seems too thick to pour, add another TBSP of milk. It should be smooth and pour easily over the bread bars.
- Once the bars have cooled, pour glaze over top and serve. Enjoy!(Store in refrigerator.)
