Lemon Bread Bars

Ingredients

  • 1 1/2 Cups All Purpose Flour
  • 1 TSP Baking Powder
  • 1/2 TSP Salt
  • 1 (3.4 oz.) Package Instant Lemon Pudding
  • 1 Cup Granulated Sugar
  • 1 Stick Butter Melted
  • 3 Eggs Large
  • 1 Cup Full Fat Sour Cream
  • Zest of 1 Lemon
  • Juice of 2 Lemons About 1/3 Cup
  • 2 TSP Lemon Extract

For Glaze:

  • 1 3/4 Cup Powdered Sugar
  • Juice of 1 Lemon
  • 1-2 TBSP Milk

Instructions

  • Preheat oven to 350 degrees F and grease an 8x8 baking dish or pan.
  • In a large bowl, whisk together flour, baking powder, salt, pudding mix, and sugar.
  • In a separate bowl, combine eggs, sour cream, lemon zest, lemon juice, lemon extract, and butter. Whisk together until smooth.
  • Combine the wet and dry ingredients and mix until well combined.
  • Pour batter into pan and bake for 40 to 45 minutes or until a toothpick inserted into the center comes out clean. Allow to cool on cooling rack.
  • While bars are cooling, prepare the glaze. Whisk together the powdered sugar, lemon juice and 1 TBSP of milk. If mixture seems too thick to pour, add another TBSP of milk. It should be smooth and pour easily over the bread bars.
  • Once the bars have cooled, pour glaze over top and serve. Enjoy!
    (Store in refrigerator.)
