Enchilada Casserole

Ingredients

  • 12 Corn Tortillas Chopped into small squares.
  • 1 1/2 Pounds Ground Beef Browned and Drained
  • 1 Can Black Beans 14oz./Drained/Rinsed
  • 1 Can of Corn 15 oz.
  • 1 Can Enchilada Sauce 28oz.
  • Shredded Cheese Optional

Instructions

  • Preheat oven to 400 degrees F and grease a 9x13 baking dish with cooking spray.
  • In a large bowl, combine all ingredients, except enchilada sauce and cheese, and stir until well mixed.

  • Add cheese on top and cover with aluminum foil. Bake 20 minutes. Uncover and cook an additional 10 minutes, until cheese is melted. Enjoy!
