Cornbread (Gluten-Free Option)
Ingredients
- 1 1/2 Cups All-Purpose Flour If using gluten-free, add 1 1/2 TSP xanthan gum.
- 1 1/2 Cups Yellow Cornmeal Double check if gluten-free.
- 1 1/2 TSP Salt
- 2/3 Cup Granulated Sugar
- 1 1/2 TBSP Baking Powder
- 1 Stick Butter 8 TBSP, Melted
- 2 Large Eggs
- 1 1/2 Cup Milk
Instructions
- Preheat oven to 400 degrees F. If using a 12 inch greased, cast iron skillet, allow to preheat in oven, or you can grease a 9x13 pan. You do not need to preheat a 9x13 pan.
- In a medium bowl, whisk together flour, cornmeal, salt, sugar, and baking powder.
- In the center of your dry ingredients, make a well and add butter, milk, and egg.
- Stir, just until combined, and pour into prepared pan or skillet.
- Bake 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. Enjoy!
