Peanut Butter Pumpkin Balls (No-Bake)

  • In a bowl, mix together the peanut butter, maple syrup, pumpkin puree, and vanilla.

  • Once well combined, use a cookie scoop, or tablespoon measure, to scoop out equal portions of the mix. Roll each portion into a ball and place on a cookie sheet.
  • Refrigerate at least 30 minutes.
  • Right before removing dough balls from refrigerator, melt chocolate chips. Microwave chocolate chips in 30 second increments, stirring in between, until chocolate is smooth. If chocolate seems too thick, add 1 TBSP of coconut oil.
  • Take dough balls out of the refrigerator and dip into the melted chocolate. Place dipped dough balls back onto the cookie sheet and return to refrigerator to harden. Enjoy!
