Peanut Butter Pumpkin Balls (No-Bake)
Ingredients
- 1/2 Cup Peanut Butter
- 1/2 Cup Maple Syrup
- 1/4 Cup Pure Pumpkin Puree
- 1 TSP Vanilla Extract
- 1/4 Cup + 1 TBSP Coconut Flour
- 1 TBSP Pumpkin Pie Spice Homemade Pumpkin Spice - Just Give Us The Recipe
- Pinch of Salt
- 1 1/2 Cup Semi Sweet Chocolate Chips
Instructions
- In a bowl, mix together the peanut butter, maple syrup, pumpkin puree, and vanilla.

- Once well combined, use a cookie scoop, or tablespoon measure, to scoop out equal portions of the mix. Roll each portion into a ball and place on a cookie sheet.
- Refrigerate at least 30 minutes.
- Right before removing dough balls from refrigerator, melt chocolate chips. Microwave chocolate chips in 30 second increments, stirring in between, until chocolate is smooth. If chocolate seems too thick, add 1 TBSP of coconut oil.
- Take dough balls out of the refrigerator and dip into the melted chocolate. Place dipped dough balls back onto the cookie sheet and return to refrigerator to harden. Enjoy!
