Pumpkin Granola
Ingredients
- 4 Cups Oats
- 3/4 Cups Raisins
- 1 Cup Coconut Flakes
- 1 Cup Chopped Pecans
- 1 TBSP Pumpkin Pie Spice
- 1/3 Cup Melted Coconut Oil
- 1 Cup Pure Pumpkin Puree
- 1/2 Cup Honey
- 2 TSP Vanilla Extract
Instructions
- Preheat oven to 350 degrees F and line a large baking sheet with parchment paper.

- In a separate bowl, combine melted coconut oil, pumpkin puree, honey, and vanilla extract.
- Spread all ingredients evenly onto the baking sheet.
- Bake for 20 minutes, give it a gently stir, then cook for another 20 minutes.
- The granola will become more crisp as it cools, so be careful not to overbake. Enjoy!
