Pumpkin Granola

Ingredients

  • 4 Cups Oats
  • 3/4 Cups Raisins
  • 1 Cup Coconut Flakes
  • 1 Cup Chopped Pecans
  • 1 TBSP Pumpkin Pie Spice
  • 1/3 Cup Melted Coconut Oil
  • 1 Cup Pure Pumpkin Puree
  • 1/2 Cup Honey
  • 2 TSP Vanilla Extract

Instructions

  • Preheat oven to 350 degrees F and line a large baking sheet with parchment paper.
  • In a large bowl, mix together oats, raisins, coconut flakes, pecans, and pumpkin spice.

  • In a separate bowl, combine melted coconut oil, pumpkin puree, honey, and vanilla extract.
  • Spread all ingredients evenly onto the baking sheet.
  • Bake for 20 minutes, give it a gently stir, then cook for another 20 minutes.
  • The granola will become more crisp as it cools, so be careful not to overbake. Enjoy!
