Flavorful Chicken Alfredo
Ingredients
For Chicken:
- 2 Chicken Breasts Cooks better if chicken breasts are pounded to the same thickness.
- 4 TBSP Butter
- 1 Onion Cut in half and sliced
- Paprika
- Salt
- Pepper
For Sauce:
- 2 TBSP Butter
- 2 TBSP Flour
- 2 1/2 Cups Half and Half Can use milk.
- 1/2 TSP Salt
- 1/4 TSP Pepper
- 1 1/2 Cups Shredded Parmesan Cheese Freshly shredded work best.
- 6 Garlic Cloves Minced
Instructions
- In a large skillet, melt 4 TBSP butter over medium heat. (I like to use cast iron.)
- Add the onion and cook for about 5 minutes.
- Push onion to one side of the pan to allow to continue to cook, stirring occasionally.
- Sprinkle each side of chicken breasts with salt, pepper, and paprika. Add chicken to the pan.
- Cook chicken for about 8 minutes on each side, or until internal temperature reads 165 degrees F. Cooking time will vary depending on thickness.
- Once chicken is cooked, remove onions and chicken from pan and set aside.
- Add 2 TBSP of butter to pan.
- Once melted, add the garlic and cook for about a minute and then whisk in the 2 TBSP of flour.
- Slowly pour in the half and half while whisking, until all the liquid is incorporated, and the sauce has slightly thickened. (Be sure to use the whisk to loosen the leftover bits on the bottom of the pan from cooking the chicken and onions! So much flavor!)
- Turn off the heat and stir in salt, pepper, and parmesan cheese, until melted.
- Serve with the chicken and onions and your favorite pasta! Enjoy!
