Easy Shepherd's Pie Casserole
Ingredients
Mashed Potato Topping:
- 2 Pounds Potatoes Russet, Peeled and Quartered
- 1/4 Cup Butter
- 1/2 Cup Milk
- Salt and Pepper To Taste
For Meat Mixture:
- 1 1/2 Pounds Ground Beef Lean
- 1 Onion Diced
- 2 TSP Garlic Minced
- 1/2 TSP Black Pepper
- 1 TSP Salt
- 1/2 TSP Thyme
- 1 TSP Paprika
- 1 1/2 TBSP Tomato Paste
- 1 TBSP Worcestershire Sauce
- 1/2 Cup Chicken Broth
- 2 Cups Frozen Peas and Carrots
Instructions
- To make potatoes, place them in a pot and cover with cold water. Cook on stove on high heat and bring to a boil. This should take about 12 to 15 minutes. Pierce with a fork to test if potatoes are tender to mash.
- Drain the water and return potatoes to pot. Mash and add the butter, milk, and salt. Mix until smooth.
- Preheat oven to 400 degrees F.
- In a skillet, melt 2 TBSP of butter over medium heat.
- Sautee onion in butter for about 5 minutes and then add ground beef. Brown ground beef until fully cooked. Add garlic and cook for about 1 minute.
- Drain meat if needed. Add salt, pepper, thyme, paprika, tomato paste, and worcestershire sauce and mix.
- Pour in chicken broth and add the frozen peas and carrots.
- Continue to cook over medium heat until the carrots and peas start to soften.
- Pour meat mixture into a glass pan and spread the mashed potatoes evenly over the top.
- Bake for 20 to 25 minutes.
