Banana Bread (Gluten Free Option)
Ingredients
- 3 Ripe Bananas Mashed/About 1 1/2 Cups
- 2 Cups All Purpose Flour Add 1 TSP xanthan gum if using gluten-free.
- 1 1/2 TSP Baking Powder
- 1 TSP Cinnamon
- 1/2 TSP Salt
- 1/4 Cup Melted Coconut Oil or Butter
- 3/4 Cup Sugar
- 2 Eggs Large
- 1/4 Cup Milk
- 1 TSP Vanilla Extract
- 3/4 Cup Chopped Walnuts Optional
Instructions
- Preheat oven to 350 degrees F and grease a 9x5 loaf pan.
- In a medium bowl, whisk together flour, baking powder, cinnamon, and salt. Set aside.
- In a separate, medium size bowl, mash bananas and hen mix in eggs, milk, oil, vanilla extract, and sugar until well incorporated.
- Slowly add the flour mixture into the wet ingredients and mix until combined.
- If you are using nuts, fold them into the batter.
- Pour batter into your loaf pan and bake for 50 minutes to 1 hour, or until a toothpick inserted into the center comes out clean. Enjoy!
