Easy Shepherd's Pie Casserole

Ingredients

Mashed Potato Topping:

  • 2 Pounds Potatoes Russet, Peeled and Quartered
  • 1/4 Cup Butter
  • 1/2 Cup Milk
  • Salt and Pepper To Taste

For Meat Mixture:

  • 1 1/2 Pounds Ground Beef Lean
  • 1 Onion Diced
  • 2 TSP Garlic Minced
  • 1/2 TSP Black Pepper
  • 1 TSP Salt
  • 1/2 TSP Thyme
  • 1 TSP Paprika
  • 1 1/2 TBSP Tomato Paste
  • 1 TBSP Worcestershire Sauce
  • 1/2 Cup Chicken Broth
  • 2 Cups Frozen Peas and Carrots

Instructions

  • To make potatoes, place them in a pot and cover with cold water. Cook on stove on high heat and bring to a boil. This should take about 12 to 15 minutes. Pierce with a fork to test if potatoes are tender to mash.
  • Drain the water and return potatoes to pot. Mash and add the butter, milk, and salt. Mix until smooth.
  • Preheat oven to 400 degrees F.
  • In a skillet, melt 2 TBSP of butter over medium heat.
  • Sautee onion in butter for about 5 minutes and then add ground beef. Brown ground beef until fully cooked. Add garlic and cook for about 1 minute.
  • Drain meat if needed. Add salt, pepper, thyme, paprika, tomato paste, and worcestershire sauce and mix.
  • Pour in chicken broth and add the frozen peas and carrots.
  • Continue to cook over medium heat until the carrots and peas start to soften.
  • Pour meat mixture into a glass pan and spread the mashed potatoes evenly over the top.
  • Bake for 20 to 25 minutes.
